Matza Pancakes

10 pieces of matza
1 cup matza meal
¾ cup sugar
¼ teaspoon salt A
little grated lemon rind
A little ground ginger
5 eggs (separated)

1. Crush and soak the matza in water, then squeeze out the liquid.

2. Beat egg yolks until they are thick

3. Mix matza with matza meal, sugar, salt, lemon rind and ginger and add the beaten egg yolks.

4. Beat egg whites until stiff and add to mixture.

5. Fry in hot butter or margarine and decorate with jelly or powdered sugar.
