Grandma Mimi's Lemon Curd

3 lemons
3 eggs
1 cup sugar
¼ cup butter

1. Grate the lemon rind and squeeze out the juice.

2. Melt the butter in a pan, add sugar, lemon juice and rind. Heat until sugar has dissolved.

3. Beat the eggs together and add a little of the butter mixture, stirring well.

4. Pour it all into the pan and heat until it gets thick. (Don’t let it boil!)

5. Let it cool down and then store in the refrigerator.

6. Delicious on matza and cakes!
