Honey Cake

 

On Rosh Hashanah, we eat many foods that contain honey.  Here is a recipe for honey cake, a popular dessert on Rosh Hashanah.

Ingredients
5 cups flour
1 teaspoon baking soda
3 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
4 eggs
½ package margarine 
1 orange (juice and rind)
1 lemon (juice and rind)

Combine the following ingredients, bring to a boil, and then let cool:
 1 cup strong tea
 1 cup honey
 1 cup brown sugar
 1 cup granulated sugar
 1 cup chopped nuts (optional)

Instructions:
Beat the eggs well, add the melted and cooled shortening, fruit rind, and juices.  Add the pre-sifted dry ingredients alternately with the tea-honey mixture.  Bake in a 9x12 inch loaf pan at a moderate temperature (350 degrees) for about 1¼ hours.
